If you're like me and needed some help setting up your Apple Watch with the workout app, here's the steps you need to take.

Start a workout
  1. Open the Workout app.
  2. Find the workout that best matches what you're doing. Learn more about each workout type.
  3. To set a goal, tap the More button next to the workout that you want to do. To skip setting a goal, tap the workout.
  4. Wait for the three-second countdown. To skip the countdown, tap the screen.
  5. Work out. To add another type of workout without ending your session, open the Workout app, swipe right, then tap the New button
End, pause, or lock your workout
  • To end your workout, swipe right, then tap the End button .
  • To pause a workout, swipe right, then tap the Pause button. Or you can press both the Digital Crown and the side button at the same time. To resume, press both buttons again.
  • To lock the screen to prevent accidental taps, swipe right, then tap the Lock button. To unlock the screen, turn the Digital Crown. Learn how to pause or end a swimming workout.
Track your progress
To see how you're doing during a workout, raise your wrist. Then turn the Digital Crown to highlight the metric that's most important to you.
When you run or walk, your Apple Watch taps you every mile or kilometer, and it shows you an update on the screen. If you're cycling, your Apple Watch taps you every five miles or kilometers instead.1

Change the metrics for each workout
  1. On your iPhone, open the Apple Watch app.
  2. Tap the My Watch tab, then tap Workout > Workout View.
  3. Tap Multiple Metric or Single Metric.
    • If you choose Multiple Metric, you can choose up to five metrics for each workout. Tap a type of workout, then tap Edit. Add or delete metrics, or touch and hold the Change Order button to change the order.
    • If you choose Single Metric, you can turn the Digital Crown to scroll through all the metrics during a workout.
Calibrate your Apple Watch
  1. While wearing your Apple Watch, go to a flat, open outdoor area that offers good GPS reception and clear skies.
  2. If you have Apple Watch Series 2 or later, you just need your Apple Watch. If you have Apple Watch Series 1 or earlier, bring your iPhone for GPS. Hold your iPhone in your hand, or wear it on an armband or waistband.
  3. Open the Workout app. To start, tap Outdoor Walk or Outdoor Run. To set a goal before starting, tap.
  4. Walk or run at your normal pace for about 20 minutes.

This is very helpful @MacAttack.
I also found these troubleshooting tips to be useful after running into some roadblocks while playing around with one at my local Apple store.

How do I get my Apple Watch to auto detect exercise?
How to enable Auto-Workout Detection on Watch
  1. Open the Settings app on your Apple Watch.
  2. Select General.
  3. Tap “Workout”
  4. Scroll down to “Start Workout Reminder” and “End Workout Reminder”
  5. Change the toggles.
Why isn't my Apple Watch registering my exercise?
Try this sequence of steps: On your iPhone, in the Watch app, go to: My Watch > Privacy > Motion & Fitness - turn Fitness Tracking off. Restart both devices by turning both off together, then restarting your iPhone first. Return to the Fitness Tracking setting and re-enable it.

Open the Apple Watch app on your iPhone. Tap My Watch, go to Health > Health Details, then tap Edit. Tap Height or Weight, then adjust.
